Mellow Corn is a Kentucky straight corn whiskey from Heaven Hill in Bardstown, bottled in bond at 100 proof, or 50% ABV, in a 75cl-sized 750ml bottle. It is at least four years old.
The mashbill is at least 80% corn, with rye and malted barley making up the rest. It is matured in once-used bourbon barrels rather than new charred oak, which gives a lighter, straw-gold colour and leaves the grain character to the fore.
The nose is creamed corn and caramel corn with thick vanilla and a hint of ripe plantain. On the palate come buttered corn, vanilla, dried banana chips, toasted oak and nuts. The finish is medium, with vanilla and sweet corn.
