Mellow Corn is a Kentucky straight corn whiskey made at the Heaven Hill distillery. It is bottled at 50% in a 70cl bottle.
The mash bill is at least 80% corn, and the whiskey was matured for four years in used bourbon casks. It is non-chill-filtered, has no added colour and shows a pale, straw-coloured tone.
Sweet corn, vanilla and light caramel come through on the nose, with oak and grain behind. The palate is full and velvety, with honey, buttered popcorn, light spice and toasted marshmallow. The finish is crisp and dry, with a mild pepper note.
