Mellow Corn is a straight corn whiskey made by Heaven Hill in the United States. It is Bottled-in-Bond, so it has been aged for at least four years and bottled at 100 proof, or 50% ABV, in a 750ml bottle.
The mash bill is at least 81% corn, and the whiskey is aged in used Bourbon barrels rather than new charred oak.
The nose is sweet, with buttered sweet corn, light vanilla and soft oak. On the palate come buttery corn on the cob, vanilla frosting and light honey, with very little spicy bite. The finish is short, clean and sweet, with a gentle warmth.
