Pale Single is a single malt from Michel Couvreur, the French house in Burgundy known for maturing whisky in sherry casks in damp cellars, away from the light. It is bottled at 45%. The nose is delicate, with vanilla, honey and fresh fruit. On the palate there is juicy pear, light caramel and soft oak, and the finish is soft and lasting, with sweet fruit and vanilla.
