Milk & Honey Apex Fortified Wine Cask is a cask-strength Israeli single malt, bottled at 60.4% ABV in a 750ml bottle. It comes from the distillery's Apex single-cask series and is made from 100% malted barley, distilled in copper pot stills.
The whisky matures in ex-fortified red wine casks, which previously held wines such as sherry or port and came from Israeli wineries. It is bottled without chill filtration, and both the whisky and the wine used in the casks meet kosher standards.
The nose offers dark raisins, stewed figs, red berries, toffee and fresh mint. On the palate come chocolate-covered berries, honey, maple syrup, smoked chilli and walnuts. The finish is long, moving from leather and tannic spice to cocoa and mint.
