Milk & Honey Apex STR Cask is a cask strength Israeli single malt, bottled at 57.8% in a 750ml bottle. It is matured in ex-red wine casks treated by the STR method, the technique developed by the late Dr Jim Swan, and it is bottled without chill filtration and with no colour added.
The casks are shaved, toasted and re-charred before filling. The spirit is distilled twice in copper pot stills from unpeated malted barley, and the head distiller hand-selects the casks for each batch.
The nose is dark cherry and plum preserve with cocoa and toasted oak. On the palate come raspberry and blackberry compote, then coffee, dark chocolate and ginger. The finish is long and dry, with tannic grip.
