A cask-strength Israeli single malt from Milk & Honey, bottled at 61.2% in a 750ml bottle and not chill-filtered. It is finished in Chardonnay casks from Domaine du Castel, a kosher winery in Israel, so the wine casks are locally produced.
The nose is strikingly close to Chardonnay, with crisp pear, green apple, ripe mango and vanilla fondant threaded with jasmine. The palate brings tropical fruit and candied lemon peel, then baked pear, white grape and a little ginger. The finish is long and warming, with dried apricot, white pepper and toasted almond, kept dry by a tannic grip from the wine cask.
