This is Edition No. 3 of the Art & Craft series from Milk & Honey Distillery in Tel Aviv, Israel. It is a limited single malt bottled at 58.3% ABV.
The spirit was distilled on 26 February 2019 and matured for about three years in casks that had first held doppelbock beer for the Ha'Aretz Brewery, a craft brewer near the Negev desert. The brewery used bourbon barrels for the beer, then returned them to be filled with new-make whisky.
The nose combines sweet malt, honey, caramelised toffee, vanilla custard and a little citrus. The palate is creamy, with crème brûlée, orange peel, dark chocolate, a mild malty bitterness, ginger and white pepper. The finish is medium to long, with coffee bean, toasted biscuit and gentle spiced warmth.
