Milk & Honey – New Make (70cl, 50%)

This is the new make spirit from Milk & Honey, which describes itself as Israel's first whisky distillery. It is the clear spirit that runs from the pot stills before any cask ageing, bottled at 50% in a 70cl bottle. It is a single malt new make, made from 100% malted barley and distilled twice. The distillery offers it so that the malt and yeast aromas at the start of a single malt can be tasted on their own, before the wood has shaped them. The late Dr Jim Swan, an authority on warm climate maturation, was the distillery's main consultant and first master distiller.
