Morand Mirabelle Eau-de-Vie (43%)

This is a Swiss mirabelle eau-de-vie from the Distillerie Louis Morand & Cie in Martigny, a family house in the Valais founded in 1889. It is bottled at 43% vol. It is made from Swiss mirabelles chosen for their ripeness and aromatic richness. The fruit is crushed, fermented and then distilled slowly in copper Holstein stills with a three-plate rectification column, and only the heart of the run is kept. The result is a clear, dry spirit with no sweetness added. The nose is led by ripe mirabelle, with yellow flesh, stone and light floral notes. The palate has more richness while keeping a precise, focused character.
