Mosgaard – Palo Cortado Organic Single Malt (October 2025) (52.5%)

An organic Danish single malt from Mosgaard, bottled at 52.5%. It is almost seven years old and matured entirely in Palo Cortado casks. Maturing began in Palo Cortado octaves, small casks of 50 to 60 litres. About half of the whisky then spent a further two and a half years in a Palo Cortado hogshead, so it had two periods of contact with the sherry. It is dry and intense, with roasted nuts, spices, cedar, caramelised cane sugar and toasted oak, and a long, lasting finish.
