Nc'nean – Huntress 2025 Lemon Meadow (70cl, 48.5%)

Lemon Meadow is the 2025 Huntress release from Nc'nean, the Highland distillery that describes itself as Scotland's first fully organic whisky distillery. The name Huntress comes from Neachneohain, the Gaelic goddess of the hunt. This organic single malt was distilled in April 2019 and bottled in March 2025 at 48.5%, in a 70cl bottle, in an edition of 5,729 bottles. It was fermented with a yeast from French sparkling wine production, then matured in STR red wine casks (56%), bourbon casks (42%) and Oloroso sherry casks (2%). It is non-chill-filtered and has no added colouring. The character is creamy and lightly floral with a fine sweetness, with lemon sorbet, fresh chamomile and buttery pastry on both nose and palate.
