Nc'nean Organic Single Malt Whisky Stout Cask Finish - Quiet Rebels: Simon (70cl, 48.5%)

This is an organic Highland single malt from Nc'nean, part of the Quiet Rebels series. It is a limited release honouring Simon, a long-serving member of the team who played a major part in developing the whisky. Made in collaboration with the Scottish brewery Innis & Gunn, it was distilled in 2020 and bottled in 2025 at 48.5%. The whisky was first matured in STR red wine casks, then finished in stout casks that had previously held Nc'nean whisky. It is non-chill-filtered and has no added colour. The nose is buttery and chocolatey, with chocolate brioche, coffee fudge cake and a little cherry jam. The palate is full and velvety, sweet and spicy, and the finish is long and warm, with toasted oak and a light caramel note.
