Old Dominick 8 Year Bourbon (75cl, 50%)

Old Dominick 8 Year is a straight bourbon distilled and aged in Memphis, Tennessee, bottled at 50% ABV without chill filtration. It is the oldest whisky the distillery has distilled itself so far. The barrels were filled in 2017, when the distillery opened, and are new, charred West Tennessee white oak. The mashbill is 75% corn, 13% rye and 12% malted barley. The spirit passes through maple charcoal filtration before going into barrel, and the distillery chose to label it bourbon rather than Tennessee whiskey. The nose brings cream soda, fresh peach and raisin. On the palate come seasoned oak, black cherry and vanilla custard, with caramel and cinnamon. The finish is long, with baking spices, caramel and crème brûlée.
