Parker's Heritage Collection 15th Edition is an 11 year old Kentucky straight wheat whiskey from Heaven Hill, released in September 2021 at 61% ABV (122 proof) in a 750ml bottle. The collection honours Heaven Hill Master Distiller Parker Beam, and this edition is non-chill filtered.
It is the third Heavy Char release, after the 2019 rye and 2020 bourbon. Heaven Hill chose 75 barrels, each given a 90-second Level 5 char, and matured them on the sixth floor of Rickhouse Y. The mash bill is 51% wheat, 37% corn and 12% malted barley.
The nose is honey, soft oak, vanilla and subtle cinnamon and nutmeg. The palate is rich and full-bodied, with molasses, butterscotch, caramelised sugar and toasted oak. The finish is long and warming, with gentle oak and peppery spice.
