Paul John Edited Single Malt

Paul John Edited is an Indian single malt made by master distiller Michael John at John Distilleries. It is made from Indian six-row barley together with peated Scottish barley, and the final vatting contains 15% peated distillate. Maturation takes place in ex-bourbon casks. The nose is toasted grain with barley and honey, light vegetal peat, lemon and seaweed, with a little beach bonfire. On the palate come wood spices, then porridge with honey and demerara. The finish has a touch of mocha, oak and perhaps old-fashioned liquorice.
