Paul John Pedro Ximénez Select Cask is an Indian single malt distilled by John Distilleries in Goa from Indian six-row barley, bottled at 48% ABV in a 750ml bottle. It is non-chill-filtered and carries no age statement.
The spirit spends roughly five years in first-fill ex-bourbon barrels, then a final two years in Pedro Ximénez sherry casks.
The nose shows raisins, dried stone fruit, wood and Christmas cake, with hints of muscadel wine and ripe plums. The palate is rich and bittersweet, with marmalade on toast, mocha, stewed plums, espresso and chocolate mousse. The finish lingers with festive spices and chocolate peanuts.
