Pearse Lyons 'Founder's Choice' is a 12 year old Irish single malt from Pearse Lyons Distillery, which opened in 2017 and became Dublin's second working distillery of this century.
The nose combines honey, apple pie with cream, light pepper, dried grasses and green herbal notes. On the palate, orchard fruits of apple and pear meet pepper, root ginger and clove, with grapefruit peel in the background.
The finish is dry, with banana chip and a mix of spices fading slowly.
