Peerless Double Oak Bourbon (75cl, 54.7%)

Peerless Double Oak is a barrel-proof Kentucky bourbon in a 750ml bottle. Each barrel receives two full extractions from new charred American oak, a method that began when leaky barrels meant the whiskey had to be moved into fresh casks and the result was good enough to become a permanent release. It is bottled without chill filtration. The nose has sweet oak, orange zest and cedar, with tobacco leaf and dried herbs beneath. On the palate, honey gives way to cinnamon, oak tannins, cherry and caramel, with leather and a thick, coating texture. The finish is long and warming, with toasted oak, dry cocoa and cedar.
