A Kentucky sweet mash bourbon from Kentucky Peerless Distilling Co. in Louisville, bottled at 54.7% ABV in a 750ml bottle. It spends five years in char level three American oak barrels before a second maturation in medium-toasted oak barrels.
Medium toast was chosen because the wood holds fewer tannins than heavy char, bringing more vanilla, honey and savoury warmth.
The nose offers brown sugar, toasted marshmallow, charred oak and honey graham cracker. The palate brings toffee, caramel, cinnamon, baked apple and dark chocolate, and the finish is long and spicy, with oak, leather and a trace of burnt sugar.
