Pelotón de la Muerte Mezcal Artesanal Joven Espadín is a mezcal from Mezcales de Leyenda, produced by Cutberto Santiago, a third-generation mezcalero. It is made from 100% Espadín agave in an artisanal distillery straddling Tlacolula and Santiago Matatlán, Oaxaca. The agave is slow-roasted for five days in a conical pit lined with volcanic lava rock, crushed with a traditional stone tahona, fermented for four days in open air and double distilled in small-batch 200-litre copper pot stills.
Community tasting notes vary. Some find kiwi fruit, lemon zest, dried peppercorn, agave and soft smoke, or aromatic wood smoke with sweeter green fruit notes such as grapes and kiwis. Others describe it as smoky with citrusy notes, while some are more critical of the finish. Flaviar describes an earthy, vegetative profile.
