Penelope Bourbon Toasted Barrel Finish is a four-grain bourbon made from corn, rye, wheat and barley at the Ross & Squibb Distillery (MGP) in Lawrenceburg, Indiana. It is bottled at 50% in a 70cl bottle and is not chill filtered.
The bourbon was aged for four to six years in new, charred American oak barrels, then finished in new, hand-toasted oak barrels. The toasting ranges from medium to heavy rather than a heavy char, and it caramelises the wood sugars.
The nose is typically described as toasted marshmallow, brown sugar and cinnamon stick, with caramel syrup, butterscotch and crème brûlée on the palate. The finish is long, with vanilla cream and lightly smoked oak.
