Penelope Four Grain Wheated Bourbon is a straight bourbon made from corn, wheat, rye and malted barley, using three different mash bills. Wheat gives a soft sweetness, with a light accent of rye spice.
It is aged for four to six years in new charred American oak barrels, then brought to 95 proof (47.5% ABV) without chill-filtration. In the glass it is light golden amber and medium-bodied.
The nose is light oak and sweet corn, then baked vanilla, honeyed pear and red apple peel. The palate is soft and round, with caramel apple, citrus zest and building white pepper. The finish is medium-long and warming.
