Penelope Toasted Barrel Finish Bourbon (75cl)

This is a straight bourbon from Penelope, made from a four-grain mashbill of corn, wheat, rye and malted barley. It comes in a 75cl bottle. After its first maturation, the bourbon is finished in new American oak barrels that have been custom toasted, with a heavy char. The toasting is described as adding sweet oak, toasted marshmallow and dark caramel without harsh tannins. The colour runs from deep amber to mahogany. The nose offers sweet oak, toasted marshmallow, caramel, vanilla bean, dried fruit and soft baking spices. The palate is rich and viscous, with dark caramel, toasted oak, brown sugar, cinnamon and a hint of dark cocoa. The finish is long and warm.
