Penfolds Bin 707 Cabernet Sauvignon (75cl, 14.5%)

Penfolds Bin 707 is a full-bodied red made entirely from Cabernet Sauvignon, bottled at 14.5% in a 75cl bottle. The fruit comes from several South Australian regions: Barossa Valley, Coonawarra, McLaren Vale, Padthaway and Wrattonbully. The wine is partly fermented in barrel, then matured for 16 to 18 months in new American oak hogsheads. It is made only in years when the fruit meets the house standard. The nose shows blackcurrant, dark plum and mulberry, with cedar, vanilla and dried mint. The palate is full and layered, with dark berries, espresso, dark chocolate and licorice, and firm, fine-grained tannins. The finish is long, with sweet spice and cedar.
