Pisco Capel is a double-distilled Chilean pisco at 40% ABV, made by the Capel Cooperative in the Elqui Valley. It is blended from Muscat, Pedro Jiménez and Torontel, with Pedro Jiménez and Torontel making up 70% and Muscat 30% to lift the aromatics.
After distillation it is filtered three times through Andean spring water, then rests in wooden casks for four to six months.
The nose is vine fruit and ripe citrus, with white flowers, green apple and a light herbal note. The palate is light and clean, with floral notes, fresh grape sweetness and faint grassy touches. The finish is long and fruity, with vanilla and herbal undertones.
