A single cask rum from Clarendon Distillery in Jamaica, distilled in 2007 and bottled by Plantation. Made from molasses, it was fermented for seven days and distilled in a pot still, then aged 11 years in American Bourbon casks, three years in Ferrand casks and five months in Ironroot Republic Bourbon casks. Dosage is 0 g/l.
The nose is rich and intense, with oak, caramel, vanilla, cinnamon, apple, raspberry and lime. The palate is dry yet fresh, with citrus, grapefruit, sorrel, gooseberry, wood, tannins and pepper.
