Preservation Pot Distilled Wheated Bourbon (75cl, 58.6%)

This is a pot-distilled wheated bourbon from Preservation Distillery in Bardstown, Kentucky. It is distilled on site in pot stills from local corn, harvest wheat and dark toast malted barley, then aged for six to seven years. Batches are small, made from up to three barrels, and the first was bottled at 58.6% ABV. The nose offers lightly burnt dark caramel, dark cherries and syrupy brown sugar, with wintergreen and hot cinnamon candies. The palate brings dark cherries, burnt caramel and mild barrel char, and the finish is warm, with hot cinnamon spice and mild dry oak.
