Rabbit Hole 'Cavehill' is a Kentucky straight bourbon.
The nose is delicate, combining spice, honey and green apple. On the palate it is creamy, with orange, honey, mint and toasted grain. The finish brings burnt toffee, raisin bread pudding and a subtle hint of bananas foster, and a faint touch of bitter oak comes through towards the end. Any alcohol astringency is minimal.
