Rabbit Hole Heigold is a high rye Kentucky straight bourbon in a 75cl bottle, bottled at 95 proof. The mash combines corn, malted German rye and malted barley.
The new make is reduced to 110 proof before filling, then matured for three years in toasted and charred American white oak. Toasting before charring lets the whiskey absorb more deeply into the wood, which gives the bourbon its deep flavour and caramel colour.
Toasted malt and warm baking spices lead on the nose. The palate opens with silky butterscotch and a little bright citrus, and the finish carries peppery spice.
