The mash is 92% rye, 5% malted barley and 3% wheat, and the whiskey is blended from barrels aged four to seven years in new charred oak, combining the distillery's own distillate with sourced rye. The name comes from the Emerald Giant, which the brand describes as the fastest-growing redwood in the world. The nose is natural rye with brown sugar, cinnamon and a faint pepper. The palate shows smooth rye spice with a hint of honey and orange peel turning peppery, and the finish is lingering cinnamon.
