Redwood Empire Pipe Dream Bourbon Whiskey (45%)

Pipe Dream is the flagship bourbon from Redwood Empire Distilling in California, bottled at 45%. It takes its name from one of the tallest redwood trees in the world. The bourbon blends whiskeys sourced from several states, including California, Indiana, Kentucky and Tennessee, with the distillery's own distillate. The mash bill is roughly 73 to 75 per cent corn, with rye and malted barley, and the barrels, all new charred American oak, range from 4 to 12 years or more in age. Tasting notes describe maple, vanilla, honey and light oak on the nose, caramel, roasted pecan and baking spice on the palate, and a medium finish of black pepper, oak and lingering sweetness.
