Grappa Bianca is a clear grappa from Distilleria Romano Levi in Neive, Piedmont, in a 70cl bottle. It is distilled in an open-fire alembic still and aged for a minimum of three years in ash wood casks of roughly 700 litres, which keep the spirit colourless.
The pomace comes from Nebbiolo grown for Barbaresco, along with Dolcetto d'Alba and Barbera d'Alba, and is blended to an old recipe from Serafino Levi, who founded the distillery in 1925. Romano Levi later ran it and drew the labels by hand.
On the nose it is fresh and herbal with a light woody base. The palate is medium dry and well balanced, with white grapes, delicate herbs and a touch of minerality.
