Saburomaru – VII The Chariot 2021/2025 Super Heavily Peated (70cl, 48%)

Saburomaru VII The Chariot is a Japanese single malt from the Saburomaru Distillery in Tonami, Toyama Prefecture. It was distilled in 2021 and bottled in 2025 at 48% in a 70cl bottle, without chill-filtration or added colouring. It is the first time the distillery has used super heavily peated Highland malt, at 80 ppm, together with ale and whisky yeast. The spirit was distilled in the ZEMON still, a cast copper-tin pot still developed by the distillery and Oigo Seisakusho. The nose combines embers, ash, fern and peat smoke with rock sugar, resin, menthol, orange peel, ripe red apple, conifer wood and ginger. The palate is round, with ashy peat, sweetness, apple and ginger. The finish is dense and lasting.
