This is an 11-year-old Caol Ila from Islay, bottled by Signatory Vintage from cask 107. The spirit was distilled in October 2010 and first matured in refill hogsheads, before a 15-month finish in fresh sherry butts.
It is bottled at a cask strength of 57.2% ABV, without chill filtration or added colour. The sherry finish adds richness to Caol Ila's smoky, maritime spirit.
It is described as a smoky, sweet and spicy dram, with charred oak, grassy peat smoke, a slight mineral edge, sea spray and tobacco smoke alongside prunes, raisins, cloves, cinnamon, cherries, toasted malt, nuts, dark chocolate and honey.
