A gin from Silent Pool Distillers on the Albury Estate in the Surrey Hills, England, built on 24 botanicals. They include locally foraged chamomile, elderflower, lavender and rose petals, with honey from nearby beehives. Spring water from the Silent Pool lake is used to bring it to bottle strength.
It is made in four stages: classic botanicals are macerated before distillation, citrus peel and pears sit in a gin basket, the most delicate flowers go into a separate infusion, and honey is added at the end.
The nose is floral and citrusy, with violet, lavender and lime leaf. Juniper leads the palate, with pear, honey and rose. The finish is long and warming, with honey, lavender and spice.
