Sonoma County Distilling Bourbon is a wheated California bourbon, bottled at 46% ABV in a 750ml bottle. Sonoma County Distilling Co. was founded in 2010.
The mashbill is 70% corn, 25% wheat and 5% malted barley, with wheat in place of the rye used in most bourbon recipes. It is double distilled in handmade alembic copper pot stills heated by direct flame.
The nose combines sweet corn, vanilla, cornbread and toasted oak, with sandalwood and cookie dough later on. The palate shows caramel, candy corn, toffee brittle and roasted almond, with a woody edge and dark spice. The finish is medium to long, with dark chocolate, coffee and drying oak.
