This is a six year old single malt from Spirit of Yorkshire, bottled at 57.6% without colouring or chill-filtration. The spirit was filled in February 2017 into a first-class ex-bourbon cask, then moved for two and a half years into rich Pedro Ximénez wood.
The distillery uses its own barley, and here the interplay of cask and grain is the appeal. Rich, oily cereal sweetness is paired with a full-bodied ex-Pedro Ximénez sherry cask, with sweetness alongside opulent spice. A few drops of water open it up further.
