A green absinthe from St. George Spirits of Alameda, California, bottled at 60% ABV in a 75cl bottle. It is distilled from a brandy base, which is infused with wormwood, fennel and star anise.
After distillation in copper pot stills, the spirit is infused again with fresh mint, tarragon, Genovese basil, lemon balm, hyssop and stinging nettles, which give it an emerald green colour. As the chlorophyll breaks down in light, the colour shifts towards a feuille morte hue.
The nose is star anise and liquorice with lemon zest and mint. The palate is warm and anise-led, then herbal, with tarragon, white pepper and violets. The finish is long and herbal, with liquorice root, wormwood and a menthol bite.
