An American apple brandy from St. George, made from a field blend of over a dozen apple varieties from a Mendocino County orchard, including Fall Pippin, Granny Smith and McIntosh. The apples are cold-fermented and double pot-distilled in copper stills, then aged from 2 to 11 years across used American whiskey barrels, used French and American wine barrels, with occasional finishing in select barrels.
The nose has crisp orchard cider, pastry crust, lemon zest, crème brûlée, apple blossom and mulling spices. The palate is a mix of buttery apple pie, honeyed clover, stewed apples, vanilla, toast and oak spice, with a bright minty or clove nuance. The finish is long and warming, echoing caramelised apple, oak and gentle spice, with a delicate nutty or amaretto-like note.
