Stag's Leap Wine Cellars S.L.V. Cabernet Sauvignon 2008 is a 100% Cabernet Sauvignon from the estate's S.L.V. vineyard in Napa Valley, planted in 1970 on volcanic soils. The soils contribute spice, concentration and a distinct minerality.
Each block was vinified and aged separately in small French oak barrels for twenty months, and the blocks were blended only in the later stages of ageing.
The nose opens with crushed blackberry and ripe plum, with anise, fennel and cedar, then smoke, liquorice and tar. The palate is full-bodied and supple, with dark plum, black cherry and cassis, ripe sweet tannins and a dark chocolate and sea salt caramel texture. The finish is long and layered.
