Starward – 100 Proof (70cl, 50%)

100 Proof is Starward's single malt, matured entirely in Australian red wine casks made of American oak. It is bottled at 50% in a 70cl bottle. The casks come mostly from the Barossa Valley and previously held full-bodied reds such as Cabernet and Shiraz. The whisky is non-chill-filtered and has no added colouring. The nose has Madagascan vanilla, toasted American oak, blackberry jam, raisins, dried figs and overripe plums. On the palate, vanilla, quince paste and Muscadelle raisins meet chocolate ganache, cinnamon and baked banana bread. The finish is long and viscous, with baking spices from the oak, ripe figs and raisins.
