Starward Botrytis Cask is a seven-year-old single malt from the Starward distillery in Melbourne, Australia, and part of its Projects Series. It was distilled in 2017 and bottled in 2024 at 48% in a 70cl bottle.
The whisky matured in casks that previously held Botrytis Semillon dessert wine. It is non-chill-filtered and of natural colour.
The nose brings dried apricots, orange blossom, honey and marzipan. On the palate are jam, cedar wood and nutmeg, followed by a long finish of apricot cake and beeswax.
