Starward – Solera

Starward Solera is an Australian whisky matured entirely in Australian fortified wine barrels. These barrels previously held Apera, the Australian take on Spanish sherry, and are 40 to 50 years old. Each one is hand selected, re-coopered, re-toasted and re-sized for ageing the spirit. The name comes from the solera approach to managing inventory, used here in a modern form to keep each batch consistent. Every Apera barrel emptied to date is represented in every bottle.
