Still Austin Bottled in Bond Red Corn Bourbon (75cl, 50%)

This is a grain-to-glass Texas bourbon from Still Austin Whiskey Co., bottled in bond at 50% (100 proof) in a 75cl bottle. All ingredients come from Texas. The mash bill is 36% Jimmy Red corn, 34% white corn, 25% rye and 5% malted barley. Jimmy Red is an heirloom corn that was once used for moonshine and nearly died out. Being bottled in bond, it comes from a single distilling season and spends at least four years in a bonded warehouse. The nose has black pepper, leather, cocktail cherries and sweet cream. The palate brings cornbread, caramel, chile heat, marzipan and peanut brittle. The finish is long, with charred oak, cocoa, coffee and pecan pie.
