Still Austin Cask Strength is a barrel-proof Texas straight bourbon from Still Austin Whiskey Co., bottled at around 59% ABV in a 750ml bottle. The mash bill is 70% white corn, 25% rye and 5% malted barley, all Texas-grown.
During ageing, small measured amounts of water are added to the barrels over several months, a method known as slow water reduction or élevage, borrowed from Cognac and Armagnac.
The nose is typically described as blood orange and tangerine, then oak spice, cinnamon and nutmeg. The palate brings dense caramel, vanilla, roasted coffee, spiced cocoa and black pepper. The finish is long and sweet, with marmalade, cocoa and toasted oak.
