Still Austin The Musician is a straight bourbon from Texas, bottled at 49.2% in a 750ml bottle. It is made with grain sourced from Texas farmers, using a mashbill of 70% white corn, 25% Elbon rye and 5% malted barley, and aged for a minimum of two years in new charred American oak.
Its distinguishing step is a slow water reduction borrowed from Cognac and Armagnac, in which small amounts of water are added to the maturing barrels over several months. Still Austin Whiskey Co. was founded in 2015.
The nose is caramel and vanilla with brown sugar. The palate brings chocolate-covered cherries, black pepper, honey and toffee, and the finish is long and soft with gentle spice.
