Hibiki Blossom Harmony is a Japanese blended whisky bottled at 43% ABV, finished in sakura (cherry blossom) wood casks. It is a limited annual release from Suntory, created by Chief Blender Shinji Fukuyo, who spent five years experimenting with grain whiskies and sakura casks.
The blend draws on the Yamazaki, Hakushu and Chita distilleries. The component whiskies are aged for more than ten years in white oak barrels before a portion is finished in sakura wood.
The nose is floral, with sakura blossom, herbs, citrus, cinnamon and vanilla. The palate brings acacia honey, ripe pear, raisin, ginger and cinnamon, ending in a sweetness like sakura mochi. The finish is long, with vanilla and soft floral notes.
