A 5 year old peated single malt from Bakery Hill, bottled by That Boutique-y Whisky Company for its Australian series. It was matured in a bourbon cask and bottled at 50% ABV in a 50cl bottle. This is Batch 1, with 429 bottles.
Bakery Hill was founded in 1999 and is run by David, a former high school chemistry teacher, and his son Andrew. It is a family-run, small-batch distillery, set up to show that fine single malt could be made in Australia.
The nose is sweet and creamy with peat, a little medicinal, and green banana. The palate is rich yet light in mouthfeel, with sweet peat again, heading towards Islay.
