The Dead Rabbit Irish Whiskey is aged for five years in bourbon casks, then finished in small virgin oak casks made specifically for this bottling. The Master Distiller, Darryl, decides when it is ready.
It is bottled at 44% in a 70cl bottle.
The nose brings cedar, toasted brown sugar and apricot pastries. On the palate caramel and vanilla come first, with nutmeg, milky coffee and macadamia building behind them. The finish is long, with waxy fruit and a touch of black pepper.
